  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

Step 1: Prepare Your Ingredients

  • Wash and pit the peaches. Chop them into small, bite-sized pieces. Dice the onion and bell pepper finely.

Step 2: Combine the Base Ingredients

  • In a medium saucepan, add the chopped peaches, diced onion, and bell pepper. Stir in the apple cider vinegar and granulated sugar, allowing the sugar to dissolve slightly.

Step 3: Add Spices and Simmer

  • Sprinkle in mustard seeds, salt, black pepper, ground ginger, turmeric, and cayenne pepper if using. Mix thoroughly. Place saucepan over medium heat and bring to a gentle boil.
  • Reduce heat and simmer for about 15-20 minutes, stirring occasionally to prevent sticking and allow flavors to meld.

Step 4: Cool and Store

  • Remove saucepan from heat once mixture thickens slightly and peaches soften. Let cool completely at room temperature.
  • Transfer to clean jar or airtight container and refrigerate. Flavors deepen after a few hours in the fridge.

Step 5: Serve
