Ingredients

  • 4 cups mixed salad greens a blend of baby spinach, arugula, and romaine
  • 2 ripe pears sliced; Bartlett or Bosc pears are excellent choices
  • 1/2 cup crumbled feta cheese
  • 1/2 cup candied pecans
  • 1/4 red onion thinly sliced
  • 1/4 cup olive oil for the dressing
  • 2 tablespoons balsamic vinegar for the dressing
  • salt and pepper to taste

Instructions

  • In a small mixing bowl, whisk together 1/4 cup olive oil and 2 tablespoons balsamic vinegar until well combined and slightly thickened. Season with salt and pepper to taste. Set aside to let the flavors meld.
  • Wash and dry the pears, then slice them into thin wedges or rounds. Thinly slice 1/4 of a red onion.
  • Place 4 cups of mixed salad greens in a large salad bowl. Toss gently to loosen and fluff the greens.
  • Layer the sliced pears and red onions over the greens. Sprinkle 1/2 cup of crumbled feta cheese and 1/2 cup of candied pecans evenly on top.
  • Pour the prepared balsamic vinaigrette over the salad. Toss gently to coat all ingredients without bruising the pears or wilting the greens. Serve immediately.
