Ingredients

  • 12 ounces vanilla flavored almond bark

Instructions

  • In a large mixing bowl, combine 1 cup creamy peanut butter with the entire 7-ounce container of marshmallow cream. Add 1 teaspoon pure vanilla extract. Mix until completely smooth and evenly blended to create the creamy base.
  • Gently fold in 2 cups of Rice Krispies cereal, being careful not to crush them. The mixture should be thick but pliable, perfect for shaping.
  • Using hands or a small cookie scoop, form the mixture into 1-inch diameter bite-sized balls. Place on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
  • Melt 12 ounces of vanilla flavored almond bark in a microwave-safe bowl in 30-second increments or using a double boiler, stirring until smooth.
  • Dip each chilled truffle into the melted almond bark using a fork or dipping tool. Let excess drip off, then place back onto parchment paper. Optionally, sprinkle finely chopped peanuts or decorative toppings over the wet coating.
  • Allow coated truffles to set completely at room temperature or in the refrigerator. Once hardened, they are ready to serve and enjoy.
