Ingredients

  • 1 cup smooth peanut butter
  • 1 large egg
  • 1 cup light or dark brown sugar I used dark
  • 1 cup granola cereal I used Fiber One Granola Cereal in Cranberry Almond
  • 1/2 cup semi-sweet chocolate chips

Instructions

  • Preheat your oven to 350°F (175°C) to ensure even baking and perfect golden-brown cookies.
  • In a large mixing bowl, combine the smooth peanut butter and brown sugar. Mix until well combined and creamy.
  • Crack the large egg into the peanut butter and sugar mixture. Stir until fully incorporated and smooth.
  • Gently fold in the granola cereal and semi-sweet chocolate chips, distributing evenly throughout the dough.
  • Using a spoon or cookie scoop, drop rounded tablespoons of dough onto a parchment-lined baking sheet, spacing cookies apart.
  • Bake in the preheated oven for 10-12 minutes until edges are lightly golden. Centers may look soft but will firm as they cool.
  • Remove cookies from oven and let cool on the baking sheet for about 5 minutes before transferring to a wire rack. Enjoy!
