Ingredients

  • 1 cup chocolate chips
  • 2 teaspoons coconut oil
  • 1/3 cup creamy peanut butter
  • 1 teaspoon pure vanilla extract
  • 2 cups crisp rice cereal
  • 1/4 teaspoon flaky sea salt , plus more for sprinkling

Instructions

  • In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the mixture is completely melted and smooth.
  • Once the chocolate is melted, stir in the creamy peanut butter and pure vanilla extract until well combined. This mixture should be smooth and glossy.
  • Gently fold in the crisp rice cereal until fully coated with the chocolate and peanut butter mixture. Be careful not to crush the cereal; you want to keep that delightful crunch!
  • Line your baking pan with parchment paper for easy removal. Pour the mixture into the pan and press it down firmly with the spatula to ensure it holds together.
  • Sprinkle a pinch of flaky sea salt over the top of the mixture for that perfect sweet-and-salty contrast.
  • Place the pan in the refrigerator for at least 1 hour, or until the bars are firm. Once set, lift them out of the pan using the parchment paper and cut them into squares.
