Ingredients

  • 3 cups Cheerios choose your favorite variety, such as original or multigrain
  • 0.5 cup peanut butter smooth or crunchy, natural without added sugar or salt
  • 0.5 cup honey natural sweetener and binder
  • 1 teaspoon pure vanilla extract optional

Instructions

  • Line an 8x8-inch square baking pan with parchment paper or lightly grease it to make removing bars easier.
  • In a microwave-safe bowl, combine the peanut butter and honey. Microwave in 20-second intervals, stirring between, until smooth and pourable, about 40-60 seconds. Alternatively, warm gently in a saucepan over low heat.
  • Stir in the vanilla extract if using, adding depth of flavor and sweetness.
  • Pour the Cheerios into a large mixing bowl. Slowly pour the peanut butter and honey mixture over them and gently fold together with a spatula until evenly coated.
  • Transfer the mixture into the prepared pan. Press down firmly with a spatula or lightly greased/dampened hands to compact the bars.
  • Place the pan in the refrigerator for at least 1 hour to allow the bars to firm up.
  • Lift the bars out using the parchment paper edges, cut into squares or rectangles, and serve immediately or store for later.

Notes

Wet your hands or spatula slightly to prevent sticking when pressing the mixture. For chewier bars, add a tablespoon of melted butter. Use natural peanut butter without added sugars or oils. Store bars in an airtight container; refrigerate for up to one week or freeze for up to 2 months.
