Ingredients

  • 16 ounces creamy peanut butter
  • 8 ounces unsalted butter room temperature
  • 1 teaspoon vanilla extract
  • 5-6 cups powdered sugar
  • 1 pound semisweet couverture chocolate for coating; can use chocolate confectionery coating or thin with vegetable shortening/coconut oil

Instructions

Prepare the Peanut Butter Filling

  • In a large mixing bowl, combine the creamy peanut butter and softened unsalted butter. Using a hand mixer or stand mixer, beat the mixture until smooth and well-combined. Add the vanilla extract and mix until fully incorporated.

Sweeten the Mixture

  • Gradually add the powdered sugar, one cup at a time, mixing on low speed to avoid a sugar cloud. Continue adding until the mixture is thick and moldable, adjusting the quantity based on desired consistency.

Form the Buckeyes

  • Using your hands, scoop about a tablespoon of the peanut butter mixture and roll into a ball. Place balls on the prepared baking sheet. Refrigerate for at least 30 minutes to firm up.

Melt the Chocolate

  • Melt the couverture chocolate using a double boiler or microwave-safe bowl. Optionally, add about a quarter cup of vegetable shortening or coconut oil to thin the coating. Stir until smooth and be careful not to overheat.

Dip the Buckeyes

  • Use a fork or dipping tool to dip each firm buckeye into the melted chocolate, allowing excess to drip off. Place back onto the parchment-lined sheet, leaving a small portion of peanut butter visible at the top.

Set and Enjoy

  • Allow chocolate to set at room temperature or refrigerate briefly. Store leftovers in an airtight container in the refrigerator.
