Ingredients

  • 2 cups cooked chicken shredded
  • 1 cup diced peaches fresh, ripe preferred
  • 1/2 cup pecans chopped, lightly toasted

  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt

  • 8 large lettuce leaves Romaine or butter lettuce

Instructions

  • Add shredded chicken, diced peaches, and toasted pecans to the dressing. Gently fold to combine without mashing the peaches.
  • Rinse and pat dry the lettuce leaves. Spoon a generous amount of chicken salad onto each leaf and fold sides over to create wraps or serve open-faced.
