Ingredients

  • 2 cups diced fresh peaches
  • 1 cup sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
  • 1 can refrigerated cinnamon rolls (with icing)
  • 1 cup vanilla yogurt
  • 1 teaspoon vanilla extract
  • 1/2 cup granola
  • whipped cream for topping (optional)

Instructions

Prepare the Peach Cobbler Filling

  • In a medium saucepan over medium heat, combine diced fresh peaches, sugar, lemon juice, and cinnamon. Stir frequently and cook for about 10 minutes until peaches soften and release juices, creating a syrupy filling. Remove from heat and cool slightly.

Bake the Cinnamon Rolls

  • Preheat oven according to cinnamon roll package instructions. Bake cinnamon rolls until golden brown and cooked through. Allow to cool enough to handle, then cut into bite-sized pieces.

Prepare the Vanilla Yogurt Mixture

  • In a small bowl, mix vanilla yogurt with vanilla extract to enhance flavor and create a creamy layer.

Assemble the Parfaits

  • In serving glasses or jars, layer the peach cobbler filling at the bottom, followed by cinnamon roll pieces, then a dollop of the vanilla yogurt mixture. Repeat layers until nearly full. Finish with a sprinkle of granola and optional whipped cream on top.

Equipment

  • Medium Saucepan
  • Oven
  • Small Bowl
  • Serving Glasses or Jars

Notes

  • Use ripe, juicy peaches for best flavor; frozen peaches can substitute if thawed and drained.
  • Don’t skip the lemon juice to brighten flavor and prevent browning.
  • Ensure cinnamon rolls are fully cooled before cutting to keep layers neat and icing intact.
  • For less sweetness, reduce sugar in peach filling or use plain yogurt instead of vanilla.
  • Try dairy-free versions using coconut yogurt and plant-based whipped cream.
