Parmesan-Basil Air Fryer Salmon

Ingredients

  • 4 fillets salmon skin removed, about 5 ounces each
  • 1/2 lemon freshly squeezed juice
  • 1/4 teaspoon kosher salt
  • freshly ground black pepper to taste
  • 3 tablespoons mayonnaise recommended Sir Kensington
  • 6 leaves fresh basil minced
  • 3 tablespoons grated Parmesan or Romano cheese
  • olive oil spray for light coating

Instructions

  • In a mixing bowl, combine the mayonnaise, minced basil, grated Parmesan cheese, lemon juice from half a lemon, kosher salt, and freshly ground black pepper. Mix well until all ingredients are integrated into a creamy topping.
  • Pat the salmon fillets dry with paper towels. Season both sides of the fillets with a little kosher salt and freshly ground black pepper.
  • Using a baking brush, generously spread the Parmesan-basil mixture over the top of each salmon fillet evenly.
  • Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  • Spray the air fryer basket lightly with olive oil spray. Place the salmon fillets in the basket, topping side up, ensuring they are not overcrowded. Air fry for about 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
  • Carefully remove the salmon from the air fryer using a spatula. Garnish with additional minced basil if desired, and serve immediately with lemon wedges on the side.

Notes

  • You can prepare the topping in advance and store it in the refrigerator for up to three days.
  • Leftover salmon can be kept in an airtight container in the refrigerator for up to two days.
  • Reheat leftover salmon gently in the air fryer or microwave to avoid drying out.
  • If fresh basil is not available, dried basil can be used but reduce the amount to about one tablespoon.
  • Substitute Romano cheese for Parmesan or Greek yogurt for mayonnaise if desired.
