Ingredients

  • 3 tablespoons mayonnaise
  • 1 teaspoon Tabasco chipotle sauce
  • 1 Black pepper focaccia bread or any preferred bread
  • 1 tablespoon chopped fresh cilantro
  • 2 ounces smoked chicken breast or halal chicken breast
  • 2 or 3 peppadew peppers
  • 6 slices avocado
  • 2 slices gouda cheese

Instructions

  • In a small mixing bowl, combine 3 tablespoons of mayonnaise with 1 teaspoon of Tabasco chipotle sauce. Mix well until fully incorporated.
  • Slice your black pepper focaccia bread into two halves. Lay them on a clean surface. On one half, spread a generous amount of your chipotle mayo mixture.
  • On top of the mayonnaise, layer the smoked chicken breast slices. Next, add the chopped fresh cilantro, followed by the peppadew peppers.
  • Place the sliced avocado on top of the peppers, then add the gouda cheese slices. Add more avocado if desired.
  • Spread a little more of the chipotle mayo on the other half of the focaccia bread, then place it on top to create a sandwich.
  • Heat your griddle or pan over medium heat. Place the sandwich on the grill and cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted. Use a spatula to flip carefully.
  • Remove the sandwich from the pan and let it cool for a minute. Slice it in half and serve.
