Ingredients

  • 300 g chickpea flour
  • 910 ml water
  • 1 teaspoon sea salt
  • 1 tablespoon fresh parsley, finely chopped
  • 480 ml sunflower oil for frying

Instructions

  • In a large mixing bowl, whisk together 300g of chickpea flour and 910ml of water. Add in 1 teaspoon of sea salt and 1 tablespoon of finely chopped fresh parsley, stirring until the mixture is smooth and well combined.
  • Pour the batter into a saucepan over medium heat. Stir continuously for about 10-15 minutes until the mixture thickens and pulls away from the sides of the pan.
  • Transfer the mixture to a greased baking dish or a flat surface. Spread it out evenly to about 1/2 inch thick and allow it to cool completely.
  • Once cooled, cut the mixture into squares or rectangles according to your preference.
  • In a deep skillet, heat approximately 480ml of sunflower oil over medium-high heat. Carefully add the cut fritters in batches and fry for about 3-4 minutes on each side or until golden brown.
  • Using a slotted spoon, remove the fritters from the oil and place them on paper towels to drain any excess oil. Serve hot with your favorite dipping sauce.
