Ingredients

  • 2 pounds frozen potatoes diced or shredded
  • 1 pound ground turkey sausage cooked into small pieces
  • 1/2 cup red bell pepper diced
  • 1/2 cup orange bell pepper diced
  • 1 cup yellow onion diced
  • 1 1/2 cups low-fat cheddar cheese shredded
  • 12 large eggs
  • 3/4 cup skim milk
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon Dijon mustard

Preparation

  • In a non-stick skillet over medium heat, cook the ground turkey sausage until browned and cooked through, breaking it into small pieces as it cooks.
  • Spray the inside of your slow cooker with non-stick cooking spray to prevent sticking. Spread the frozen diced or shredded potatoes evenly at the bottom.
  • Sprinkle the cooked turkey sausage over the potatoes. Add the diced red and orange bell peppers and the yellow onion, distributing evenly. Top with shredded low-fat cheddar cheese.
  • In a large mixing bowl, whisk together the 12 eggs, skim milk, kosher salt, ground black pepper, and Dijon mustard until well combined and slightly frothy.
  • Slowly pour the egg mixture over the layered ingredients in the slow cooker, ensuring it covers everything.
  • Cover the slow cooker with its lid and set it to cook on low for 7-8 hours overnight.
  • In the morning, lift the lid and use a spatula to scoop out portions. Serve immediately with fresh fruit or a light salad.
