Ingredients

  • 6 cups cubed whole grain bread
  • 2 ripe peaches diced
  • 1 cup chopped pecans
  • 4 large eggs
  • 2 cups milk any preferred variety like whole, almond, or oat milk
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon butter for greasing the baking dish

Instructions

  • Grease a 9x13-inch baking dish with the tablespoon of butter to prevent sticking and add richness.
  • In a large mixing bowl, combine the cubed whole grain bread, diced peaches, and chopped pecans. Toss gently to distribute evenly.
  • In a separate bowl, whisk together the eggs, milk, maple syrup, vanilla extract, ground cinnamon, and salt until smooth and well combined.
  • Pour the custard mixture over the bread, peaches, and pecans. Gently press the bread cubes down to absorb the liquid evenly. Cover tightly and refrigerate overnight or at least 6 hours.
  • Preheat the oven to 350°F (175°C). Remove the cover and bake uncovered for 45-50 minutes, until the top is golden brown and custard is set.
  • Allow to cool for a few minutes before serving. Drizzle with extra maple syrup or add yogurt or whipped cream if desired.
