  • 1 large yellow onion peeled and cut into 1/2 inch thick rounds

  • 2 tablespoons mayonnaise
  • 1/2 cup sour cream
  • 1/4 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • splash Tabasco sauce
  • 1 tablespoon lemon juice

Instructions

  • Preheat your oven to 425°F (220°C). Slice the large yellow onion into 1/2 inch thick rounds and carefully separate the rings.
  • In a mixing bowl, whisk together the unbleached all-purpose flour, paprika, salt, ground pepper, ground cumin, and ground coriander until well combined.
  • Coat each onion ring in the flour mixture, shaking off any excess flour for a perfect crunch.
  • Line a baking sheet with parchment paper. Arrange the coated onion rings in a single layer and bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  • While baking, prepare the cumin dipping sauce by whisking together heavy cream, corn starch, mayonnaise, sour cream, ground coriander, ground cumin, a splash of Tabasco sauce, and lemon juice until smooth and creamy.
  • Remove the onion rings from the oven and let them cool slightly. Serve warm alongside the cumin dipping sauce and enjoy!
