Ingredients

  • 1 pound potatoes cut into ½ inch slices or wedges
  • 1 teaspoon garlic powder or granules
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 tablespoons olive oil or corn oil

Instructions

  • Preheat your oven to 425°F (220°C). A hot oven is key for crispy fries, so make sure it’s fully heated before baking.
  • Wash and peel the potatoes if you prefer (leaving the skin on adds extra texture and nutrients). Slice them into ½ inch thick wedges or slices, trying to keep the pieces uniform in size to ensure even cooking.
  • Place the cut potatoes in a large bowl. Add the olive oil, garlic powder, smoked paprika, salt, and black pepper. Toss everything together until the potatoes are evenly coated with the oil and spices.
  • Line a baking sheet with parchment paper or lightly grease it to prevent sticking. Spread the seasoned potato pieces in a single layer, making sure they aren’t overcrowded. Overcrowding can cause the fries to steam rather than crisp.
  • Bake for 25-30 minutes, flipping or tossing the fries halfway through baking. This helps them cook evenly and develop a golden, crisp exterior on all sides.
  • Once the fries are golden brown and crispy, remove them from the oven. Let them cool for a minute or two, then serve immediately with your favorite dipping sauce or as a side dish.

Equipment

  • Oven
  • Baking Sheet
  • Large Bowl
  • Parchment Paper

Notes

For extra crispy fries, soak the cut potatoes in cold water for 30 minutes before seasoning and pat dry thoroughly. Use a high smoke point oil like corn oil for extra crispiness. Flip fries halfway through baking for even browning. Broil for 2-3 minutes at the end for extra crispiness but watch carefully to avoid burning. Leftovers can be stored in an airtight container for up to 3 days and reheated in the oven at 400°F for about 10 minutes.
