Ingredients

  • 2 teaspoons olive oil for sautéing the chicken and adding flavor
  • 1 pound boneless and skinless chicken thighs diced into 1-inch pieces
  • 2 teaspoons minced garlic for an aromatic kick
  • 1/3 cup barbecue sauce the star ingredient that gives this dish its signature flavor
  • Salt to season the chicken perfectly
  • 10 pieces taco shells stand and stuff variety for maximum filling capacity
  • 2 cups shredded mozzarella cheese because what’s a pizza taco without cheese?
  • 1/3 green bell pepper diced thinly for a crunchy texture
  • 1/4 red onion sliced thinly for a bit of sharpness
  • 1/4 cup mushrooms sliced for an earthy flavor
  • 2 tablespoons olives sliced for a briny contrast
  • 1 pinch Italian seasoning or a pizza topper for that classic pizza flavor

Instructions

  • In a large skillet, heat the olive oil over medium heat. Add the diced chicken thighs and season with salt. Sauté for about 5-7 minutes until the chicken is browned and cooked through.
  • Once the chicken is cooked, stir in the minced garlic and cook for an additional minute until fragrant. Pour in the barbecue sauce, stirring to coat all the chicken pieces evenly. Allow it to simmer for a few minutes until heated through.
  • Preheat your oven to 375°F (190°C). Arrange the taco shells on a baking sheet, standing them up to get ready for filling.
  • Spoon the barbecue chicken mixture generously into each taco shell. Be sure to fill them to the brim with that deliciousness!
  • Top each taco with a generous handful of shredded mozzarella cheese. Then add the sliced green bell pepper, red onion, mushrooms, and olives on top of the cheese. Sprinkle a pinch of Italian seasoning over the entire tray.
  • Place the baking sheet in the preheated oven and bake for about 10-12 minutes, or until the cheese is melted and bubbly, and the taco shells are crispy.
  • Remove the tacos from the oven and let them cool for a minute or two. Serve them hot with your favorite toppings like sour cream, avocado, or fresh cilantro. Enjoy your Oven Baked Barbecue Chicken Pizza Tacos!
