Brownie Batter

  • 1 cup unsalted butter
  • 1 cup granulated sugar

Instructions

Preparation

  • Preheat your oven to 350°F (175°C). This ensures that your brownies will bake evenly and rise perfectly.
  • Line a 9x13 inch baking pan with parchment paper, leaving some overhang on the sides for easy removal later. If you don’t have parchment, grease the pan with butter or cooking spray.

Make Brownie Batter

  • In a large mixing bowl, melt the unsalted butter. Once melted, add the granulated sugar and mix until well combined.
  • Incorporate the eggs, one at a time, mixing well after each addition. Add the vanilla extract and stir until everything is combined.
  • In another bowl, whisk together the all-purpose flour, unsweetened cocoa powder, and salt. Gradually fold the dry mixture into the wet ingredients until just combined. Be careful not to overmix!
  • Gently fold in the coarsely chopped Oreo cookies into the brownie batter. This will add that delicious crunch and chocolatey flavor.

Prepare Cheesecake Layer

  • In a separate bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar, mixing until creamy. Finally, add 2 teaspoons of vanilla extract and mix until well combined.

Assemble and Bake

  • Pour half of the brownie batter into the prepared baking pan, spreading it evenly. Then, spoon the cream cheese mixture over the brownie layer, smoothing it out gently. Top with the remaining brownie batter, trying to cover the cheesecake layer as much as possible.
  • Using a knife, gently swirl the brownie batter and cream cheese layer together for a marbled effect. Don’t overdo it; you want distinct layers!
  • Place the pan in the preheated oven and bake for 30-35 minutes, or until a toothpick inserted comes out with a few moist crumbs. Let the brownies cool in the pan for at least 15 minutes before transferring them to a cooling rack.
