Ingredients

  • 2 tsp orange zest
  • 1 Tbsp fresh ginger peeled and grated
  • 1/4 cup orange juice
  • 3 Tbsp coconut aminos
  • 3 Tbsp avocado oil
  • 1/4 tsp sea salt
  • 1 pound halibut cut into 4 fillets
  • 1 cup fresh blueberries
  • 1 avocado peeled and diced
  • 1/3 cup red bell pepper chopped
  • 2 Tbsp chives chopped
  • 2 Tbsp lime juice
  • 1 pinch sea salt to taste

Instructions

  • Begin by preheating your oven to 400°F (200°C). This will ensure your halibut cooks evenly and develops a nice golden color.
  • In a mixing bowl, combine the orange zest, grated ginger, orange juice, coconut aminos, avocado oil, and sea salt. Whisk together until well blended.
  • Place the halibut fillets in the baking dish and pour the marinade over them. Ensure each fillet is evenly coated. Let the fish marinate for about 10-15 minutes to absorb all those delicious flavors.
  • Once marinated, place the baking dish in the preheated oven. Bake the halibut for 15-20 minutes, or until the fish flakes easily with a fork and is opaque in the center.
  • While the halibut is baking, prepare the salsa. In a clean mixing bowl, combine the fresh blueberries, diced avocado, chopped red bell pepper, chives, lime juice, and a pinch of sea salt to taste. Gently toss to combine, being careful not to mash the avocado.
  • Once the halibut is done baking, remove it from the oven and let it rest for a minute. Serve the halibut topped with a generous scoop of blueberry avocado salsa. Enjoy the vibrant flavors and the health benefits of this delicious dish!

Equipment

  • Baking Dish
  • Mixing Bowl
  • Whisk
  • Knife
  • Cutting Board
  • Measuring Cups and Spoons

Notes

  • Check for bones in the halibut before cooking to enhance the dining experience.
  • Do not over-marinate the halibut; 15-20 minutes is sufficient to avoid a mushy texture.
  • Ensure your oven is properly preheated before placing the halibut inside for even cooking.
  • Be gentle when mixing the salsa to keep the avocado chunks intact.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days; reheat halibut in the oven and enjoy salsa fresh.
