Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 cups fresh peaches sliced
  • 1/4 cup balsamic vinegar non-alcoholic
  • 1 tablespoon honey
  • 1 teaspoon fresh thyme chopped
  • Fresh basil for garnish

Instructions

Prepare and Season the Chicken

  • Start by patting the chicken breasts dry with paper towels. This helps achieve a nice sear. Season both sides generously with salt, pepper, garlic powder, and onion powder.

Sear the Chicken

  • Heat the olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the chicken breasts. Sear for about 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

Cook the Peaches and Make the Sauce

  • In the same skillet, add the sliced peaches. Stir for 2-3 minutes until they start to soften and release their juices. Pour in the balsamic vinegar and honey, stirring to combine. Allow the sauce to simmer gently for 3-4 minutes, reducing slightly and thickening.

Return Chicken to the Skillet

  • Nestle the chicken breasts back into the skillet, spoon some of the peach-balsamic sauce over the top. Sprinkle the chopped fresh thyme evenly across the dish. Cover and reduce heat to low. Cook for 6-8 minutes until the internal temperature reaches 165°F (75°C).

Garnish and Serve

  • Remove the skillet from heat. Garnish the chicken breasts with fresh basil leaves. Serve immediately with your favorite sides.

Notes

  • Use ripe peaches: Fresh ripe peaches provide the best sweetness; frozen thawed peaches can be substituted if out of season.
