Ingredients

  • 1 pound Italian sausage casings removed; choose hot or sweet based on your heat preference
  • 2 to 4 tablespoons olive oil for sautéing the sausage and garlic
  • 3 to 5 cloves garlic finely minced or pressed
  • 1 teaspoon oregano optional
  • 14.5 ounce can petite diced tomatoes with juices
  • 2 cups water to cook the pasta in
  • 2 cups penne pasta any small-shaped pasta will work
  • 1 cup sour cream for creaminess and tang
  • 1/2 cup freshly grated Parmesan cheese to enhance the flavor
  • 1 cup loosely packed fresh basil chiffonaded for a fresh finish

Instructions

Step 1: Cook the Sausage

  • In a large pot or Dutch oven, heat 2 to 4 tablespoons of olive oil over medium heat. Add the Italian sausage, breaking it apart with a wooden spoon. Cook until browned and fully cooked through, about 5 to 7 minutes.

Step 2: Sauté the Garlic

  • Once the sausage is cooked, add the finely minced garlic (3 to 5 cloves) to the pot. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.

Step 3: Add Tomatoes and Seasoning

  • Stir in the can of petite diced tomatoes along with their juices, and if you’re using it, sprinkle in the oregano. Mix well to combine the flavors.

Step 4: Incorporate Water and Pasta

  • Pour in 2 cups of water and stir to combine. Bring the mixture to a boil, then add 2 cups of penne pasta. Stir well to ensure the pasta is submerged in the liquid.

Step 5: Cook the Pasta

  • Reduce the heat to a simmer, cover the pot, and let it cook for about 10 to 12 minutes, or until the pasta is al dente and the liquid has mostly absorbed.

Step 6: Finish the Dish

  • Once the pasta is cooked, stir in 1 cup of sour cream, 1/2 cup of freshly grated Parmesan cheese, and 1 cup of chiffonaded fresh basil. Mix until everything is well combined and creamy. Season with freshly ground black pepper to taste.

Step 7: Serve and Enjoy!
