Ingredients

  • 8 oz penne pasta
  • 2 tablespoons olive oil
  • 1 pound turkey sausage sliced
  • 1 medium onion diced
  • 1 bell pepper diced (any color)
  • 2 cloves garlic minced
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  • Heat 2 tablespoons of olive oil in your large skillet over medium heat. Add the sliced turkey sausage and cook until browned, about 5-7 minutes. Remove the sausage from the pan and set aside.
  • In the same skillet, add the diced onion and bell pepper. Sauté until softened and fragrant, about 4 minutes. Add the minced garlic and cook for another minute, making sure not to burn it.
  • Sprinkle the Cajun seasoning and smoked paprika over the softened veggies. Stir to coat evenly, releasing those delicious spices’ aromas. Add the sausage back into the pan and mix well.
  • Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a gentle boil, then add the uncooked penne pasta. Stir to ensure the pasta is submerged in the liquid. Reduce heat to medium-low and cover the skillet.
  • Let it simmer for about 12-15 minutes, stirring occasionally to prevent sticking, until the pasta is tender and has absorbed most of the liquid.
  • Once the pasta is cooked, remove the lid and stir in the grated Parmesan cheese until melted and creamy. Taste and adjust with salt and pepper as needed. Add a splash more cream or broth if desired.
  • Sprinkle chopped parsley over the top for a fresh pop of color and flavor. Serve hot and enjoy the creamy, spicy goodness in every bite!

Equipment

  • Large deep skillet or wide sauté pan
  • Wooden spoon or silicone spatula
  • Sharp knife and cutting board
  • Measuring Cups and Spoons
  • Grater

Notes

  • Keep an eye on the pasta simmer time to avoid overcooking and mushy texture.
  • Add garlic last and cook briefly to prevent burning and bitterness.
  • Adjust sauce thickness by adding more broth or cream as needed during cooking.
  • Feel free to substitute turkey sausage with chicken sausage or other preferred types.
  • For a dairy-free version, use full-fat coconut milk and a dairy-free Parmesan alternative.
