Heat 2 tablespoons of olive oil in your large skillet over medium heat. Add the sliced turkey sausage and cook until browned, about 5-7 minutes. Remove the sausage from the pan and set aside.
In the same skillet, add the diced onion and bell pepper. Sauté until softened and fragrant, about 4 minutes. Add the minced garlic and cook for another minute, making sure not to burn it.
Sprinkle the Cajun seasoning and smoked paprika over the softened veggies. Stir to coat evenly, releasing those delicious spices’ aromas. Add the sausage back into the pan and mix well.
Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a gentle boil, then add the uncooked penne pasta. Stir to ensure the pasta is submerged in the liquid. Reduce heat to medium-low and cover the skillet.
Let it simmer for about 12-15 minutes, stirring occasionally to prevent sticking, until the pasta is tender and has absorbed most of the liquid.
Once the pasta is cooked, remove the lid and stir in the grated Parmesan cheese until melted and creamy. Taste and adjust with salt and pepper as needed. Add a splash more cream or broth if desired.
Sprinkle chopped parsley over the top for a fresh pop of color and flavor. Serve hot and enjoy the creamy, spicy goodness in every bite!
