Ingredients

Pie Crust

  • 1 9-inch single pie crust Store-bought or homemade

Filling Ingredients

  • 1 cup light brown sugar
  • 4 large eggs At room temperature
  • 3 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 cup light corn syrup Karo recommended
  • 2 tablespoons melted butter
  • 2 teaspoons pure vanilla extract
  • 1 cup quick oats Uncooked

Instructions

  • Step 1: Prepare the Pie Crust - Start by preparing your pie crust. You can use a store-bought crust or make your own from scratch. If you’re using a store-bought crust, simply follow the package instructions for pre-baking. If you prefer homemade, roll out the dough to fit a 9-inch pie dish, trim the edges, and blind bake it at 350°F (175°C) for about 10-15 minutes until lightly golden.
  • Step 2: Mix the Filling - In a large mixing bowl, combine the light brown sugar, flour, ground cinnamon, and salt. Whisk these dry ingredients together until thoroughly mixed.
  • Step 3: Incorporate the Eggs - Add the 4 eggs to the dry mixture, whisking until well combined. The mixture will become slightly thicker as you incorporate the eggs.
  • Step 4: Add the Corn Syrup and Vanilla - Pour in the light corn syrup, melted butter, and pure vanilla extract. Mix everything together until you have a smooth and glossy filling.
  • Step 5: Fold in the Oats - Gently fold in the uncooked quick oats. This adds the heartiness that makes oatmeal pie so special. Ensure that the oats are evenly distributed throughout the filling.
  • Step 6: Fill the Pie Crust - Carefully pour the oatmeal filling into the prepared pie crust. Make sure to spread it evenly with a spatula.
  • Step 7: Bake the Pie - Place the pie in a preheated oven at 350°F (175°C) and bake for 45-50 minutes, or until the center is set and a toothpick inserted comes out clean. The filling will puff slightly and may crack on the top, which is perfectly normal.
  • Step 8: Cool and Serve - Once done, remove the pie from the oven and let it cool at room temperature for about 1-2 hours. This will help it set further. Serve it warm or at room temperature, and consider adding a scoop of vanilla ice cream on top for an extra special treat!

Notes

Make sure your eggs are at room temperature for better mixing and texture. For a more pronounced flavor, consider toasting the oats before adding them to the mixture. If you prefer a softer filling, reduce the baking time slightly, but be cautious not to underbake it. Enjoy the pie cold from the fridge for a tasty treat the next day; the flavors will deepen as it sits.
