Ingredients

  • 1 cup whole milk
  • 1 cup all-purpose flour
  • 3 tablespoons vegetable oil
  • 3 tablespoons sugar
  • 2 eggs at room temperature
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • pinch salt
  • 1/2 cup Nutella

Instructions

  • Whisk together the dry ingredients β€” flour, sugar, baking powder, and salt β€” in a medium bowl.
  • In a separate large bowl, beat the eggs, then add the whole milk, vegetable oil, and vanilla extract.
  • Slowly pour the dry mixture into the wet ingredients, stirring gently until just combined. A few lumps are fine to keep pancakes tender.
  • Place your non-stick skillet or griddle over medium heat. Test readiness by sprinkling a few drops of water on the surface; if they dance and evaporate quickly, it’s ready.
  • Pour roughly 1/4 cup of batter for each pancake onto the hot skillet. Cook until bubbles form on the surface and edges look set, about 2-3 minutes.
  • Flip carefully and cook for another 1-2 minutes until golden brown. Repeat with remaining batter, stacking pancakes on a plate.
  • Spread a generous spoonful of Nutella on one pancake, then top it with another pancake to make a sandwich.
  • Serve warm, optionally with fresh berries or a dusting of powdered sugar.
