Ingredients

  • 1/4 cup butter
  • 1/4 cup smooth peanut butter preferably not all-natural for creaminess
  • 1/2 cup honey
  • 2/3 cup packed brown sugar
  • 4 cups quick-cooking oats make sure not to use rolled oats
  • 2 cups crispy rice cereal
  • 1 teaspoon vanilla extract
  • 2 tablespoons mini chocolate chips
  • 2 tablespoons peanut butter chips

Instructions

  • Start by greasing your 9x13 inch baking dish with a little butter or lining it with parchment paper for easy removal later.
  • In a medium saucepan over low heat, combine the butter, smooth peanut butter, honey, and brown sugar. Stir constantly until everything is melted and well combined, about 5 minutes.
  • In a large mixing bowl, combine the quick-cooking oats and crispy rice cereal. Mix well.
  • Pour the melted wet mixture over the dry ingredients. Add vanilla extract and stir until the dry ingredients are fully coated.
  • Gently fold in the mini chocolate chips and peanut butter chips until evenly distributed.
  • Pour the mixture into the prepared baking dish. Using a spatula, press down firmly to create an even layer.
  • Cover the dish with plastic wrap or foil and refrigerate for at least 1-2 hours, or until firm enough to cut.
  • Remove the bars from the dish and slice into desired sizes. Store leftovers in an airtight container in the refrigerator.
