Ingredients

  • 1 cup creamy peanut butter or nut butter of choice
  • 5 tablespoons unsalted butter
  • 2 tablespoons milk (any type you prefer)
  • 1 cup 100% pure maple syrup (optional for added sweetness)
  • 2 teaspoons vanilla extract
  • 1 cup dark chocolate chips
  • Pinch sea salt
  • 3 cups rolled oats (regular or gluten-free)

Instructions

  • In a medium saucepan over low heat, combine the creamy peanut butter and unsalted butter. Stir continuously until both are melted and well blended, about 2-3 minutes.
  • Remove the saucepan from heat. Stir in the milk, maple syrup (if using), and vanilla extract. Mix until fully combined and smooth.
  • In a large mixing bowl, combine the rolled oats, dark chocolate chips, and a pinch of sea salt. Pour the melted mixture over the dry ingredients and stir until well combined.
  • Line your baking pan with parchment paper. Pour the mixture into the pan and press it down firmly and evenly with a spatula or your hands.
  • Place the pan in the refrigerator for at least 2 hours, or until the bars are firm. Once set, lift the bars out using the parchment paper and cut into squares.
