Instructions
In a medium saucepan over low heat, combine the creamy peanut butter and unsalted butter. Stir continuously until both are melted and well blended, about 2-3 minutes.
Remove the saucepan from heat. Stir in the milk, maple syrup (if using), and vanilla extract. Mix until fully combined and smooth.
In a large mixing bowl, combine the rolled oats, dark chocolate chips, and a pinch of sea salt. Pour the melted mixture over the dry ingredients and stir until well combined.
Line your baking pan with parchment paper. Pour the mixture into the pan and press it down firmly and evenly with a spatula or your hands.
Place the pan in the refrigerator for at least 2 hours, or until the bars are firm. Once set, lift the bars out using the parchment paper and cut into squares.

Notes
For vegan bars, substitute butter with vegan butter and use dairy-free milk and chocolate chips.
