Instructions

  • In a large mixing bowl, combine the peanut butter, pure maple syrup, pure vanilla extract, sea salt, and oats. Stir well until fully incorporated and a thick, sticky mixture forms.
  • Line your baking dish or muffin tin with parchment paper for easy removal. Press the peanut butter mixture firmly into the bottom or each muffin cup, creating an even layer reaching the edges.
  • In a double boiler or microwave-safe bowl, melt the chocolate chips and coconut oil together. If using microwave, heat in 30-second intervals, stirring in between, until smooth and fully melted.
  • Pour the melted chocolate over the pressed peanut butter layer, spreading evenly with a spatula. Sprinkle with flaky sea salt if desired.
  • Place the dish in the refrigerator for at least 1-2 hours or until the chocolate has fully set. Once firm, remove and lift out using parchment paper. Cut into squares or pop out of muffin tin.
