Ingredients

  • 1 cup almond milk unsweetened
  • 1/4 cup chia seeds
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup nectarines diced
  • 1/2 cup figs diced
  • 1/4 teaspoon cinnamon
  • a pinch salt
  • 1-2 tablespoons water for cooking fruit jam

Instructions

Prepare the Nectarine-Fig Jam

  • Combine diced nectarines and figs in a small saucepan. Add 1-2 tablespoons of water to help soften the fruit.
  • Cook over medium-low heat, stirring occasionally, until the fruit breaks down and thickens to a jam-like consistency, about 10-12 minutes.
  • Stir in cinnamon and a pinch of salt, then remove from heat and let cool completely.

Mix the Chia Pudding Base

  • In a medium bowl or mason jar, pour almond milk. Add chia seeds, maple syrup, and vanilla extract.
  • Whisk thoroughly to prevent chia seeds from clumping. Let sit for 5 minutes, then whisk again to evenly distribute seeds.

Combine Jam and Chia Mixture

  • Once the nectarine-fig jam has cooled, gently fold it into the chia pudding base, leaving some swirls for a marbled effect.

Refrigerate Overnight

  • Cover and refrigerate overnight or at least 4 hours to allow chia seeds to absorb liquid and thicken.

Serve and Enjoy

  • In the morning, stir pudding. Add almond milk if too thick. Top with fresh fruit, nuts, or maple syrup if desired and serve.
