Ingredients

  • 1 baguette sliced into 1/2 inch pieces
  • 2 tablespoons olive oil
  • 2 nectarines sliced
  • 4 ounces blue cheese crumbled
  • 1/4 cup honey
  • fresh thyme leaves for garnish
  • salt to taste
  • pepper to taste

Instructions

  • Begin by slicing your baguette into 1/2 inch pieces. Lay the slices out on a baking sheet and brush each one lightly with olive oil. Preheat your oven to 375°F (190°C), then place the baking sheet inside and toast the bread for about 8-10 minutes or until the edges are golden brown.
  • While your baguette slices are toasting, wash and slice the nectarines into thin wedges. The skin is edible and adds texture and color, but you can remove it if preferred.
  • Once your baguette slices are toasted and slightly cooled, assemble by placing a few slices of nectarine on each piece of toast. Then, sprinkle the crumbled blue cheese generously over the top.
  • Drizzle each crostini with honey, allowing it to drizzle over the nectarines and cheese. Finish by sprinkling fresh thyme leaves on top and adding a pinch of salt and pepper to taste.
