Instructions
Begin by slicing your baguette into 1/2 inch pieces. Lay the slices out on a baking sheet and brush each one lightly with olive oil. Preheat your oven to 375°F (190°C), then place the baking sheet inside and toast the bread for about 8-10 minutes or until the edges are golden brown.
While your baguette slices are toasting, wash and slice the nectarines into thin wedges. The skin is edible and adds texture and color, but you can remove it if preferred.
Once your baguette slices are toasted and slightly cooled, assemble by placing a few slices of nectarine on each piece of toast. Then, sprinkle the crumbled blue cheese generously over the top.
Drizzle each crostini with honey, allowing it to drizzle over the nectarines and cheese. Finish by sprinkling fresh thyme leaves on top and adding a pinch of salt and pepper to taste.
Arrange your Nectarine & Blue Cheese Crostini Drizzles on a serving platter and serve immediately for the best flavor and crispness.

Notes
Use day-old baguette for crunchier crostini that hold toppings well without becoming soggy.
Flip the baguette slices halfway through baking for even toasting.
Substitute blue cheese with milder cheeses like feta or goat cheese if preferred.
Warm honey slightly before drizzling to enhance its flavor and fluidity.
Store toasted baguette and toppings separately to keep crostini fresh; re-toast bread before assembling.
