Ingredients

  • 1 1/2 cups confectioners' sugar

Instructions

Prepare the Crust

  • In a mixing bowl, combine the all-purpose flour, confectioners' sugar, cornstarch, and salt. Mix well until fully combined.
  • Add the cool room temperature butter pieces to the dry mixture. Using a pastry cutter or your fingers, blend until the mixture resembles coarse crumbs.
  • Press the mixture firmly into the bottom of a greased springform pan and bake at 350°F (175°C) for about 10-12 minutes or until slightly golden. Remove from the oven and let it cool.

Make the Cream Cheese Filling

  • In a large mixing bowl, beat the softened cream cheese with an electric mixer until it's smooth and creamy.
  • Gradually add the confectioners' sugar and continue mixing until fully incorporated.
  • Stir in the vanilla extract and blend until combined.

Combine and Bake

  • Pour the cream cheese mixture over the cooled crust, spreading it evenly.
  • Bake the cheesecake in the preheated oven for about 50-60 minutes, or until the edges are set but the center still has a slight jiggle.
  • Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.

  • Cover and refrigerate for at least 4 hours, preferably overnight.
