Ingredients

  • 1 teaspoon dried basil leaves
  • 1 teaspoon dried parsley leaves
  • 1/2 teaspoon ground oregano
  • 1 pinch salt
  • 1 pinch freshly ground black pepper
  • 1 tablespoon olive oil
  • 1 teaspoon garlic minced
  • 1 1/2 cups marinara sauce
  • 1-2 teaspoons Italian seasoning adjust to your tastes
  • 1/2 cup shredded mozzarella
  • 1/2 cup pasta water
  • 2-3 cups pasta of choice cooked

Instructions

Build Mozzarella Chicken Step by Step

  • Start by flattening the chicken breasts to about 1/2-inch thickness using a meat mallet or rolling pin. Season both sides with salt, pepper, dried basil, dried parsley, and oregano.
  • In a large skillet, heat olive oil over medium-high heat. Add chicken fillets and cook for 5-7 minutes on each side until golden brown and cooked through. Remove chicken and set aside.
  • In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Pour in marinara sauce and stir in Italian seasoning. Let simmer for about 5 minutes.
  • Return the chicken to the skillet, nestling it into the marinara sauce. Spoon sauce over each fillet and sprinkle shredded mozzarella cheese on top.
  • Cover the skillet and let simmer for another 5 minutes until the cheese is melted and bubbly. Add a splash of reserved pasta water if the sauce is too thick.
  • Serve the Mozzarella Chicken over cooked pasta, drizzling additional marinara sauce on top. Garnish with fresh basil or parsley if desired.
