Start by flattening the chicken breasts to about 1/2-inch thickness using a meat mallet or rolling pin. Season both sides with salt, pepper, dried basil, dried parsley, and oregano.
In a large skillet, heat olive oil over medium-high heat. Add chicken fillets and cook for 5-7 minutes on each side until golden brown and cooked through. Remove chicken and set aside.
In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Pour in marinara sauce and stir in Italian seasoning. Let simmer for about 5 minutes.
Return the chicken to the skillet, nestling it into the marinara sauce. Spoon sauce over each fillet and sprinkle shredded mozzarella cheese on top.
Cover the skillet and let simmer for another 5 minutes until the cheese is melted and bubbly. Add a splash of reserved pasta water if the sauce is too thick.
Serve the Mozzarella Chicken over cooked pasta, drizzling additional marinara sauce on top. Garnish with fresh basil or parsley if desired.
