Ingredients

  • 1/2 cup butter softened
  • 3/4 cup light brown sugar firmly packed, dark also works
  • 1 tsp vanilla extract
  • 1 large egg
  • 3/4 cup creamy peanut butter
  • 1/2 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp cornstarch
  • 1 cup rolled oats
  • 1/2 cup plain M&Ms
  • 1/2 cup semi-sweet chocolate chips

Instructions

  • Preheat your oven to 350°F (175°C). This ensures that your cookies will bake evenly and come out perfectly golden brown.
  • In a large mixing bowl, combine the softened butter, light brown sugar, and vanilla extract. Use a hand mixer or a whisk to cream these ingredients together until the mixture is light and fluffy.
  • Next, add the large egg and creamy peanut butter to the mixture. Blend them in until completely incorporated, creating a smooth, creamy base.
  • In a separate bowl, whisk together the all-purpose flour, baking soda, cornstarch, and rolled oats. Once mixed, gradually add this dry mixture to your wet ingredients, stirring until just combined.
  • Gently fold in the plain M&Ms and semi-sweet chocolate chips. This is where the fun begins! Make sure the mix-ins are evenly distributed throughout the dough.
  • Using a cookie scoop or tablespoon, drop rounded balls of dough onto your prepared baking sheet, spacing them about 2 inches apart to allow for spreading.
  • Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked, but they will continue to set as they cool.
