In a large skillet, heat 1 tablespoon of olive oil over medium heat until it shimmers.
Add 1 cup of chopped sweet onion to the skillet. Sauté for 3-4 minutes until translucent and fragrant.
Add ½ pound ground turkey and ½ pound ground beef to the skillet. Break the meat apart with a wooden spoon and cook until browned and cooked through, about 6-8 minutes.
Sprinkle in 1 teaspoon chili powder, 1 teaspoon cumin powder, ½ teaspoon garlic powder, ½ teaspoon dried oregano, ½ teaspoon sea salt, and ½ teaspoon freshly ground black pepper. Stir well and let spices toast for a minute.
Add the drained chili beans and the can of Ro-Tel (tomatoes and chiles) to the skillet. Stir and simmer on low heat for about 5 minutes.
While the meat mixture simmers, warm or fry your 12 corn tortillas as preferred.
Assemble tacos by spooning the meat mixture onto warm tortillas and topping with desired fixings like lettuce, tomato, sour cream, avocado, and cheese.
