Ingredients

Cake Batter

  • 1 egg egg acts as a binding agent
  • 1 cup sugar sweetens the cake
  • 4 Tbsp unsalted butter softened at room temperature
  • 6 Tbsp milk warmed to room temperature
  • 1 tsp baking soda provides leavening
  • 2 cups flour base of the cake
  • 2-3 graham crackers optional, adds texture and crunch

Creamy Filling

  • 16 Tbsp butter softened at room temperature, for filling
  • 1 can sweetened condensed milk provides sweetness and creaminess
  • 8 oz cream cheese softened at room temperature
  • 8 oz cool whip fully thawed, lightens the filling

Instructions

Cake Preparation

  • Preheat your oven to 350°F (175°C) to ensure even baking and perfect rise.
  • In a large mixing bowl, beat softened butter and sugar together until light and fluffy. Add the egg and mix until well incorporated. Gradually add warmed milk and mix until smooth.
  • In a separate bowl, whisk together flour and baking soda. Gradually add the dry mixture to the wet ingredients, mixing until just combined. Avoid overmixing; a few lumps are fine.
  • Pour the batter into a greased 9x13 inch baking pan. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely.

Filling Preparation

  • Beat softened butter and cream cheese together in a large bowl until smooth and creamy. Gradually add sweetened condensed milk and mix well. Gently fold in thawed cool whip until light and fluffy.

Assembly and Serving

  • Once cooled, cut the cake horizontally to create two layers. Place one layer on a serving platter and spread a generous layer of creamy filling on top. Sprinkle crushed graham crackers if using. Place the second layer on top and repeat. Finish with a layer of filling on top.
  • Cover the cake and refrigerate for at least 2 hours or overnight to allow flavors to meld and filling to set. Slice and serve chilled.
