Ingredients

  • 1 cup non-dairy milk (almond, oat, or coconut work well)
  • 2 shots espresso (see notes for alternatives)
  • 1 cup mint leaves (do not pack)
  • 1 frozen banana
  • 1 tablespoon nut/seed butter (almond, cashew, or sunflower seed)
  • 1 teaspoon vanilla extract
  • tiny pinch sea salt
  • Sweetener of choice (maple syrup, agave, or stevia), to taste
  • Ice (optional, for a thicker texture)
  • 1 teaspoon cacao nibs

Instructions

Brew the Espresso

  • Start by brewing two shots of espresso using your espresso machine. If you don’t have an espresso machine, you can substitute with strong brewed coffee or use instant coffee granules dissolved in hot water. Let the espresso cool slightly while you prepare the other ingredients.

Prepare Your Ingredients

  • Gather all your ingredients: non-dairy milk, mint leaves, frozen banana, nut butter, vanilla extract, sea salt, sweetener, and cacao nibs. Make sure the banana is frozen ahead of time for the perfect creamy texture.

Blend Everything Together

  • In your blender, combine the non-dairy milk, cooled espresso, mint leaves, frozen banana, nut butter, vanilla extract, sea salt, and your chosen sweetener. If you prefer a thicker shake, add a handful of ice. Blend on high until smooth and creamy, scraping down the sides as necessary.

Taste and Adjust

  • Once blended, taste your shake and adjust the sweetness if needed. If you want more mint flavor, feel free to add a few more mint leaves and blend again.

Serve and Garnish

  • Pour the Mint Chip Espresso Shake into a glass and sprinkle cacao nibs on top for added crunch and a hint of chocolate flavor. You can also garnish with a mint sprig for a pop of color and freshness.
