Ingredients

  • 16 tablespoons salted butter room temperature
  • 32 ounces powdered sugar
  • 6 tablespoons cherry juice from maraschino cherry jar
  • 1 teaspoon almond extract
  • more cherry juice if needed to adjust the consistency

Instructions

  • Place the 16 tablespoons of room temperature salted butter into a mixing bowl. Beat on medium speed with an electric mixer until smooth and creamy, about 2-3 minutes to aerate and make it light and fluffy.
  • Slowly add the 32 ounces of powdered sugar to the creamed butter. Start mixing at low speed to avoid a sugar cloud, then gradually increase to medium speed. Mix until fully incorporated and smooth.
  • Add 6 tablespoons of cherry juice from the maraschino cherry jar. Mix on low speed until combined. Add more cherry juice one tablespoon at a time if frosting is too thick, until desired consistency is reached.
  • Add 1 teaspoon almond extract and mix until well combined and frosting is fluffy.
  • Check the consistency of the frosting. If too thick, add more cherry juice; if too thin, add more powdered sugar until perfect texture is achieved.
  • Use the frosting to frost cakes, cupcakes, or cookies. Pipe decorative swirls if desired and enjoy!
