Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup pure maple syrup
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 cups fresh peaches sliced
  • 1/2 cup apple cider vinegar
  • 1/4 cup sugar
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon black peppercorns

Instructions

Prepare the Pickled Peaches

  • In a small saucepan, combine the apple cider vinegar, sugar, mustard seeds, and black peppercorns. Bring to a boil over medium heat, stirring occasionally until the sugar dissolves.
  • Remove from heat and let cool slightly. Place sliced peaches in a clean glass jar or bowl, pour the warm vinegar mixture over peaches, ensuring they are fully submerged. Cover and refrigerate for at least one hour.

Make the Maple-Mustard Glaze

  • Mix together the maple syrup and Dijon mustard in a small bowl. Set aside the glaze.

Cook the Chicken

  • Heat olive oil in a large skillet over medium heat. Pat chicken breasts dry and season with salt and pepper on both sides.
  • Place chicken breasts in the skillet and cook for 5-6 minutes on one side until golden brown. Flip chicken, brush maple-mustard glaze over cooked side, and cook for another 5-6 minutes, basting occasionally. Chicken is done when internal temperature reaches 165°F (75°C).

Serve

  • Transfer cooked chicken to plates. Spoon pickled peaches over the top or serve on the side. Pair with steamed green beans or a light salad if desired.
