  • 1 batch macaroni and cheese prepared as directed and well chilled
  • 0.5 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup breadcrumbs about, seasoned if preferred
  • 4 tablespoons olive oil divided, for brushing or drizzling

Instructions

  • Start with a batch of your favorite macaroni and cheese. Cook and spread it out in a shallow dish, then refrigerate until completely chilled, ideally overnight.
  • Arrange three shallow bowls: one with ½ cup all-purpose flour, the second with 2 beaten eggs, and the third with about 1 cup breadcrumbs. Season breadcrumbs if desired.
  • Using a spoon or cookie scoop, portion the chilled macaroni and cheese into golf ball-sized balls. Roll each ball in flour, dip in beaten eggs, then coat thoroughly with breadcrumbs. Place on a parchment-lined baking sheet.
  • Drizzle or brush the cheese balls lightly with olive oil. Bake at 400°F (200°C) for 15-20 minutes, turning halfway through, until golden and crispy on all sides.
  • Remove from oven and let cool for a few minutes. Serve warm with your favorite dipping sauces like ranch, marinara, or spicy aioli.
