Ingredients

Pasta

  • 12 pieces uncooked lasagna noodles

Seasoning

  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 pound ground beef (90% lean)

  • ½ piece yellow onion, finely diced
  • 2 cloves garlic, finely minced

Sauce

  • 24 ounces marinara sauce

Cheese Filling

  • 15 ounces ricotta cheese
  • 1 piece egg
  • ½ cup grated parmesan cheese
  • 2 ½ cups shredded mozzarella cheese
  • ½ teaspoon Italian seasoning
  • 2 tablespoons chopped fresh parsley

Instructions

  • Step 1: Prepare the Noodles - Start by boiling a large pot of salted water. Carefully add the uncooked lasagna noodles and cook according to the package instructions until al dente. Typically, this takes about 8-10 minutes. Once cooked, drain the noodles and lay them flat on a clean kitchen towel or parchment paper to prevent sticking.
  • Step 2: Cook the Beef Mixture - In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until it turns translucent, about 3-4 minutes. Add the minced garlic and ground beef to the skillet. Season with salt and pepper to taste. Cook until the beef is browned and cooked through, breaking it apart with a wooden spoon, about 5-7 minutes. Once cooked, remove from heat and let the mixture cool slightly.
  • Step 3: Prepare the Cheese Filling - In a large mixing bowl, combine the ricotta cheese, egg, grated parmesan cheese, Italian seasoning, and chopped fresh parsley. Mix until well incorporated. Once the beef mixture has cooled, gently fold it into the cheese mixture, creating a rich filling.
  • Step 4: Assemble the Roll Ups - Preheat your oven to 375°F (190°C). Spread a thin layer of marinara sauce on the bottom of a 9×13 inch baking dish. Take one lasagna noodle and place a generous scoop of the beef and cheese filling along one end. Carefully roll the noodle up and place it seam-side down in the baking dish. Repeat this process with the remaining noodles and filling.
  • Step 5: Add Sauce and Cheese - Once all the roll-ups are in the dish, pour the remaining marinara sauce over the top. Sprinkle with the shredded mozzarella cheese to create a cheesy crust. Cover the dish with foil to keep the roll-ups moist during baking.
  • Step 6: Bake - Place the baking dish in the preheated oven and bake for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes or until the cheese on top is melted and bubbly, and golden brown in spots.
  • Step 7: Garnish and Serve - Once out of the oven, let the Lasagna Roll Ups cool for a few minutes. This will make them easier to serve. Garnish with additional chopped parsley if desired. Serve with a side salad or garlic bread for a complete meal.

Notes
