Ingredients

For the Mint Pesto

  • 4 cups green kale leaves tightly packed, chopped
  • 1 cup fresh mint leaves

For the Lamb Burgers

  • 1 pound ground lamb meat

  • handful spinach or spring green mix

Instructions

Prepare the Mint Pesto

  • In your food processor, combine the chopped kale, mint leaves, walnuts, garlic, and salt. Pulse until finely chopped.
  • Gradually add the walnut oil while the processor is running, blending until the mixture is smooth and creamy. Taste and adjust salt as needed.

Form the Lamb Patties

  • In a mixing bowl, take the ground lamb meat and season with salt and pepper to taste. Mix gently but thoroughly.
  • Divide the mixture into three equal portions and shape them into patties. Be careful not to overwork the meat to keep the burgers tender.

Cook the Burgers

  • Heat the grapeseed or olive oil in a grill or skillet over medium-high heat.
  • Add the lamb patties and cook for about 4-5 minutes on each side, or until they reach your desired doneness.
  • In the last minute of cooking, place a slice of jack cheese on each patty and cover to melt.

Toast the Buns

  • In a separate pan, melt the unsalted butter over medium heat.
