Ingredients

  • 1 (5-ounce) can 2% evaporated milk
  • 1 cup granulated white sugar
  • 1/4 teaspoon salt
  • 12 large marshmallows quartered
  • 2 cups white chocolate chips
  • 1/2 cup grated lime zest
  • 2 tablespoons key lime juice

Instructions

  • Line a 9x9-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal later.
  • In a medium saucepan, combine the evaporated milk, granulated sugar, and salt. Stir over medium heat until the sugar has dissolved completely.
  • Add the quartered marshmallows to the mixture. Continue stirring until the marshmallows are fully melted and combined.
  • Remove the saucepan from heat and add the white chocolate chips. Stir until the chocolate has melted and the mixture is smooth and creamy.
  • Stir in the grated lime zest and key lime juice until well incorporated.
  • Pour the fudge mixture into the prepared baking pan, smoothing the top with a spatula.
  • Place the baking pan in the refrigerator and let the fudge chill for at least 2 hours, or until firm.
  • Lift the fudge out of the pan using the parchment paper overhang. Cut into squares and serve.
