Ingredients

  • 3 cups shredded mozzarella cheese
  • 2 ounces cream cheese
  • 1 3/4 cups almond flour
  • 1 tablespoon baking powder
  • 2 large eggs

Instructions

  • Preheat the oven to 400°F (200°C) to ensure even baking and a golden crust.
  • In a microwave-safe bowl, combine shredded mozzarella cheese and cream cheese. Microwave in 30-second intervals, stirring between, until fully melted and combined, about 1-2 minutes.
  • In a separate mixing bowl, whisk together almond flour and baking powder until well blended.
  • After the cheese mixture has cooled slightly, add the eggs and mix well. Gradually add the dry ingredients to the cheese and egg mixture, folding together until a dough forms.
  • Line a baking sheet with parchment paper. Shape the dough into 2-3 inch bun-sized rounds and place them evenly spaced on the sheet.
  • Bake for 12-15 minutes until golden brown and firm to the touch.
