Ingredients

  • 3 large egg yolks
  • 1/4 teaspoon salt
  • pinch pepper small pinch of cayenne
  • 1-2 tablespoons fresh lemon juice
  • 1/2 cup unsalted butter melted

Instructions

  • In a small saucepan, melt the unsalted butter over low heat until fully melted but not browned. Remove from heat and let cool slightly.
  • Add the egg yolks to your blender. Ensure the blender is dry to avoid unwanted textures.
  • Add the salt, cayenne pepper, and lemon juice to the blender with the egg yolks. Blend on low speed for about 30 seconds until frothy and pale.
  • With the blender running, slowly pour in the melted butter in a thin stream to emulsify the sauce.
  • Check the consistency; if too thick, blend in a teaspoon of warm water to loosen. Adjust seasoning with more salt or lemon juice if needed.
  • Transfer the hollandaise sauce to a serving dish or keep warm in the blender on low speed. Serve immediately.
