Ingredients

  • 6 boneless, skinless chicken breasts
  • 1-2 tablespoons olive oil depending on the size of your pan
  • 2 teaspoons poultry seasoning
  • Dijon mustard for spreading on chicken
  • salt to taste
  • pepper to taste
  • fresh herbs optional, like parsley or thyme

Instructions

  • Rinse the chicken breasts under cold water and pat them dry with paper towels to prepare for searing.
  • In a bowl, combine poultry seasoning, salt, and pepper. Rub this mixture evenly over the chicken breasts.
  • Heat 1 to 2 tablespoons of olive oil in a skillet over medium heat until the oil shimmers.
  • Place the seasoned chicken breasts in the hot skillet and cook for 5-7 minutes on each side until golden brown and cooked through.
  • Remove chicken from heat and spread a generous amount of Dijon mustard over each breast. Return to skillet for 2-3 minutes to warm and meld flavors.
  • Remove chicken from skillet and let rest for a few minutes before slicing. Serve with your favorite sides and enjoy.
