Ingredients

  • 2 pounds chicken breasts boneless and skinless, fresh or frozen
  • 1 ounce ranch seasoning mix 1 oz envelope
  • 1 cup water
  • 8 ounces cream cheese
  • 4 ounces diced green chiles mild, 1 small can
  • 10 ounces cream of chicken soup condensed, undiluted, 1 small can
  • 2 cups chicken broth low sodium
  • 8 ounces egg noodles

Instructions

  • If using frozen chicken breasts, no need to thaw! Just place them directly into the Instant Pot. If using fresh, lay the chicken breasts at the bottom in a single layer.
  • Sprinkle the ranch seasoning mix evenly over the chicken. Pour in the water and low sodium chicken broth to create a flavorful base.
  • Tear the cream cheese into chunks and distribute it over the chicken. Add the diced green chiles and the cream of chicken soup. Do not stir; let ingredients sit on top.
  • Seal the Instant Pot lid and set to cook on high pressure for 15 minutes (20 minutes if using frozen chicken). Ensure pressure release valve is set to sealing.
  • Once cooking is complete, perform a quick release of pressure by turning the valve to venting. Be cautious of the steam.
  • Open the lid and shred the chicken with two forks directly in the pot. The chicken should be tender and easy to pull apart.
  • Add the egg noodles directly into the pot with the shredded chicken and creamy sauce. Stir to combine. Lock the lid and cook on high pressure for 4 minutes. Perform a quick release again.
  • Stir everything well to combine noodles with the creamy ranch sauce. Serve hot, garnished with fresh herbs if desired.
