Ingredients

  • 2 pounds chicken thighs bone-in, skin-on, 6-8 pieces
  • ½ teaspoon paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon garlic powder
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 cup chicken stock or broth

Instructions

  • Pat the chicken thighs dry with paper towels. In a small bowl, combine paprika, dried oregano, garlic powder, salt, and black pepper. Rub the spice mixture evenly over both sides of each chicken thigh.
  • Turn the Instant Pot to the “Sauté” setting and add olive oil and butter. Once melted and hot, place chicken thighs skin-side down. Sear for 3-4 minutes without moving, then flip and sear the other side for 2 minutes.
  • Remove chicken thighs and set aside. Pour chicken stock into the Instant Pot and scrape up browned bits with a wooden spoon. Return chicken thighs skin-side up in a single layer.
  • Secure the lid and set valve to “Sealing.” Select “Manual” or “Pressure Cook” and set timer for 10 minutes. When done, allow natural pressure release for 5 minutes, then vent remaining pressure.
  • Remove chicken from pot and place on serving plate. If desired, switch Instant Pot to “Sauté” and simmer sauce to thicken. Spoon sauce over chicken and serve immediately.

Notes

Patting the chicken dry before seasoning helps achieve crispy skin. Searing adds flavor and texture. For extra crispy skin, broil the thighs 2-3 minutes after pressure cooking. Use bone-in, skin-on thighs for best results. You can double the recipe if your Instant Pot is large enough, but do not exceed max fill line.
