Ingredients

  • 1 cup cherry tomatoes halved
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 cup ricotta cheese
  • 2 tablespoons honey
  • 1 teaspoon red pepper flakes
  • 4 slices whole-grain bread
  • fresh basil leaves for garnish

Instructions

Roast the Cherry Tomatoes

  • Preheat your oven to 400°F (200°C). In a small bowl, toss the halved cherry tomatoes with olive oil, salt, and pepper. Spread them out evenly on a baking sheet lined with parchment paper. Roast for about 15 minutes, or until the tomatoes are soft and slightly caramelized.

Prepare the Honey-Spiced Ricotta

  • While the tomatoes roast, mix the ricotta cheese with the honey and red pepper flakes in a small bowl. Stir until well combined.

Toast the Bread

  • Toast your whole-grain bread slices until they’re golden and crispy, using a toaster or grill pan.

Assemble the Toasts

  • Spread a generous layer of the honey-spiced ricotta mixture on each toasted bread slice. Spoon the roasted tomatoes on top, including some of the flavorful juices. Garnish with fresh basil leaves.
