Ingredients

  • 1 pound chicken breast cut into bite-sized pieces
  • 2 medium zucchinis sliced into half-moons

  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon fresh ginger grated
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional
  • 2 green onions chopped for garnish

Instructions

Step 1: Prepare Your Ingredients

  • Cut the chicken breast into bite-sized pieces. Slice the zucchinis into medium-thick half-moons. Mince the garlic and grate the fresh ginger.

Step 2: Make the Honey-Soy Sauce

  • In a small bowl, whisk together the soy sauce, honey, grated ginger, black pepper, and red pepper flakes if using.

Step 3: Cook the Chicken

  • Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces in a single layer and sear for 2-3 minutes without stirring. Stir and cook for another 3-4 minutes until cooked through.

Step 4: Add Garlic and Zucchini

  • Push the chicken to one side of the skillet. Add the minced garlic to the empty space and sauté for about 30 seconds until fragrant. Add the sliced zucchinis and stir-fry for 3-4 minutes until tender-crisp.

Step 5: Combine and Glaze

  • Pour the honey-soy sauce over the chicken and zucchini. Stir well to coat evenly. Cook for 1-2 minutes until the sauce thickens and becomes glossy.

Step 6: Garnish and Serve

  • Remove from heat and sprinkle with chopped green onions and sesame seeds. Serve immediately with steamed rice, noodles, or grains.
