Ingredients

  • 1 French baguette sliced
  • 2 ripe peaches pitted and sliced
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme leaves plus more for garnish
  • salt and pepper to taste
  • 4 ounces goat cheese softened
  • balsamic glaze for drizzling

Instructions

Prepare the Peaches

  • Preheat your oven to 400°F (200°C). In a medium bowl, combine the sliced peaches with honey, olive oil, fresh thyme leaves, salt, and pepper. Toss gently to coat the peaches evenly.

Roast the Peaches

  • Spread the peach slices out in a single layer on a baking sheet lined with parchment paper or a silicone mat. Roast the peaches for about 15-20 minutes, or until they’re tender and slightly caramelized around the edges. Remove from the oven and let cool slightly.

Toast the Baguette Slices

  • While the peaches are roasting, arrange the baguette slices on a separate baking sheet. Toast them in the oven for about 5-7 minutes until golden and crisp. Optionally, brush with olive oil before toasting.

Assemble the Crostini

  • Spread a generous layer of softened goat cheese on each toasted baguette slice. Top each with a few slices of the honey-roasted peaches.
