Ingredients

For the Chicken Salad

  • 2 pieces Boneless, skinless chicken breasts
  • 4 cups Fresh spinach
  • 1/4 cup Feta cheese crumbles
  • Red onion sliced
  • Grape tomatoes sliced
  • 1/2 Avocado sliced

For the Honey Mustard Dressing

  • 3 tablespoons Honey
  • 2 tablespoons Dijon mustard
  • 2 tablespoons Apple cider vinegar
  • 4 tablespoons Olive oil
  • Salt and pepper to season chicken
  • Olive oil for cooking chicken

Instructions

Prepare the Chicken

  • Season the chicken breasts with salt and pepper. Heat a grill pan or skillet over medium-high heat and add a drizzle of olive oil.
  • Once hot, place the chicken breasts in the pan. Cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
  • Remove from heat and let the chicken rest for a few minutes before slicing.

Make the Honey Mustard Dressing

  • In a mixing bowl, combine 3 tablespoons of honey, 2 tablespoons of Dijon mustard, 2 tablespoons of apple cider vinegar, and 4 tablespoons of olive oil.
  • Whisk until smooth and creamy. Adjust the sweetness or tanginess according to your taste by adding more honey or mustard.

Assemble the Salad

  • In a large mixing bowl, add the fresh spinach as the base for your salad.
  • Slice the red onion, grape tomatoes, and avocado. Add these ingredients to the bowl with the spinach, creating a colorful and vibrant mix.
  • Crumble the feta cheese over the salad and slice the cooked chicken breasts. Arrange the sliced chicken on top of the salad.
  • Pour the homemade honey mustard dressing over the salad, then toss gently to combine all the ingredients, ensuring everything is well-coated.
